Chilli & Onion Jam
Delicious with cheese!

- 1/2 onion – finely sliced
- 1 clove garlic – crushed
- 100ml vinegar
- 20 cherry tomatoes, halved
- 180ml sugar
- 3 green chillies, finely sliced
Gently fry onion with some oil. When translucent, add the garlic, vinegar, cherry tomatoes, sugar and chilli.
Turn up the heat and simmer until the mixture is syrupy in texture, about 15 minutes. Do not overcook – it thickens as it cools.
(You can also add some root ginger to this)
