Haggis Toasties

Excellent Haggis toasties, with plenty of gooey melted cheddar and a pinch of pickled onions on the side.

Ingredients

  • Haggis, cooked & warmed up
  • 1 large red onion
  • 2 tbsp red or white wine vinegar
  • 1 tsp raw cane sugar
  • mature cheddar cheese, grated
  • slices of thick cut sourdough or granary bread
  • English mustard (or Dijon works fine too)
  • caramelised onion chutney
  • 100g butter, room temperature
  • 1 garlic clove, crushed.
  • Rocket leaves

Method

Pickled onions: thinly slice the red onion into a bowl. Add vinegar, sugar and a pinch of salt. Scrunch up and set aside.

Mix the crushed garlic into the butter.

Butter the outside of all the slices with the garlic butter. Spread a little mustard on the inside of one slice of each bread and caramelised onion chutney on the other. Sprinkle some cheese on the mustard, then add the cooked & warmed Haggis. Place a couple of rocket leaves on, then some more cheese and sandwich with the chutney slice of bread.

Fry toasties in a medium hot pan for 4-5 mins a side, pressing down occasionally, until cheese is melted and outsides are golden and crispy. Keep warm in the oven.

Slice toasties in half and service with the pickled onions on the side.
