Wholemeal Soda bread with Cheese and Onion

Deliciously rich soda bread enriched with cheese and onion.

Ingredients
- 100g wholemeal flour
- 400g plain white flour
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 100g Parmesan cheese
- 1/2 sauteed onion
- 150g grated cheddar
- 400ml buttermild
Method
- Preheat oven to 200C Fan (220C)
- Mix dry ingredients with some of the parmesan (keep some for the top)
- Add sauteed onion
- Add cheddar – grated (or gruiere – not blue, its too strong)
- Mix a bit
- Add buttermilk (full-fat)
- Mix with a spoon or bring together with your hands
- If you need more liquid, add some water to the empty buttermilk bowl and get that out
- Line baking tray with baking paper
- Shape into 2 ball/dome shape loaves, place on paper
- Wet hands slightly and tap top of breads – then sprinkle the remaining parmesan on (the water helps it stick)
- Cut each into 4, deeply, with a scraper
- Into over for 20 to 25 minutes
- Let them cool before you eat it with cheese and butter
