Suurlemoentert / Lemon Meringue Pie

Ingredients

  • 1 can of condensed milk
  • 1 packet of tea biscuits
  • 1/2 cup lemon juice
  • 3 eggs – separated
  • 6 tablespoons sugar
  • 3 tablespoons butter

Method

  • Heat oven to 160°C
  • Crush biscuits fine
  • Mix with melted butter and press crust into tin.
  • Mix yolks and condensed milk. Beat by hand and add lemon juice.
  • Pour over crust.
  • Beat egg-whites to stiff peaks. Add sugar by the spoonful and mix.
  • Put over tart and bake for 20 minutes
  • Cool completely.
