Pork braised in milk

Ingredients

  • 1 pork fillet – or loin
  • 1 red onion – sliced (or leek)
  • 3-4 garlic loves – chopped
  • 80g pancetta, diced
  • 1 sprig of rosemary and thyme
  • 2 cups of milk
  • 100ml cream
  • Lemon rind
  • Oil & butter for frying

Method

  • Saute the onions, garlic until soft
  • Brown the pork and pancetta
  • Add the rest of the ingredients, place in the oven for 2 hours – turning once or twice – at 150°C
  • Slice pork and pour over the sauce.

Serve with broad beans and new potatoes with parsley.
