Scones

Ingredients

  • 350g self raising flour (+ more for dusting)
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 85g butter – cubed
  • 3 tablespoons caster sugar
  • 175ml milk
  • 1 teaspoon vanilla extract
  • squeeze of lemon juice
  • beaten egg for glaze
  • jam & clotted cream to serve

Method

  • Preheat oven to 200°C (fan)
  • Mix & rub flour, butter, salt, baking powder together
  • Add & mix in sugar
  • Heat milk in microwave for 30 seconds then add vanilla extract and lemon juice
  • Make a well and add liquid
  • Roll out and fold 2 or 3 times
  • cut 4cm deep and bake with glaze for 10 minutes
