Marinated Chilli Salmon

Ingredients

  • 1 red onion, finely sliced
  • 1 tablespoon fresh lemon juice
  • 1 cup olive oil
  • 250g smoked salmon
  • 2 fresh red chillies, deseeded and chopped
  • fresh ground black pepper to taste

Method

  • Marinade red onion in lemon juice and olive oil for 10 minutes
  • Chop the smoked salmon into small pieces and combine with the red onion and lemon juice. Add the chillies.
  • Season with black pepper.
  • Mix well and refrigerate in an airtight container for up to a week.
  • Serve with fresh bread.
