Marinated Chilli Salmon

Ingredients
- 1 red onion, finely sliced
- 1 tablespoon fresh lemon juice
- 1 cup olive oil
- 250g smoked salmon
- 2 fresh red chillies, deseeded and chopped
- fresh ground black pepper to taste
Method
- Marinade red onion in lemon juice and olive oil for 10 minutes
- Chop the smoked salmon into small pieces and combine with the red onion and lemon juice. Add the chillies.
- Season with black pepper.
- Mix well and refrigerate in an airtight container for up to a week.
- Serve with fresh bread.
