Massaman Curry Paste

Ingredients

  • 15 dried red chillies
  • 1 tablespoon coriander seeds, ground
  • 1 teaspoon cumin seeds, ground
  • 1 stick cinnamon, ground
  • 3 cloves, ground
  • 4 peppercorns, ground
  • 4 tablespoons garlic, chopped
  • 4 tablespoons shallots, chopped
  • 1 heaped teaspoon shrimp paste
  • 1 – 2 stick lemongrass, chopped
  • 1 teaspoon fish sauce

Method

  • Soak chillies in water for 10 minutes. Deseed.
  • Dry-fry dry spices in wok then grind to a powder
  • Add all the other ingredients and grind to a fine paste.
  • Store in refrigerator for up to 3 months.
