Scots Pies (Lard crust)

Makes 4 pies.
Lard crust
Ingredients
- 250g plain flour
- 100g lard
- 125ml boiling water
- A wee bit of milk for glazing.
Method
Have lard at room temperature, put in bowl and add the boiling water.
Stir with a fork until creamy.
Add flour. Keep pastry warm. Press into four 10x4cm pie-cases. Cut out lids with holes.
Chill and dry out the crusts overnight (6 hours minimum). Uncovered.
Scots pie
Ingredients
- 300g lamb mince
- 1/2 teaspoon marjoram (dried)
- heaped teaspoon mace (dried) – this is the key ingredient!
- 4 tablespoons beef or lamb stock
- 1 teaspoon white pepper
- 1 teaspoon salt
Method
Mix pie ingredients together. Don’t cook!
Place in pastry cases, put lids on.
Bake for 40 – 45 minutes at 160C.
