Chicken Ballotine

For the stuffing: fry mushrooms, leeks, butter, lemon juice, paprika, cayenne pepper, anchovies, tarragon, salt & pepper (basically a version of Lars’s Spicy Butter).
Cool & stuff into chicken breasts. Roll and wrap in thinly sliced Parma ham. Wrap tightly in cling-film & poach. Then fry, slice and serve.
