Wholemeal Soda bread with Cheese and Onion

Deliciously rich soda bread enriched with cheese and onion.

Ingredients

  • 100g wholemeal flour
  • 400g plain white flour
  • 1 tsp bicarbonate of soda
  • 1 tsp salt
  • 100g Parmesan cheese
  • 1/2 sauteed onion
  • 150g grated cheddar
  • 400ml buttermild

Method

  • Preheat oven to 200C Fan (220C)
  • Mix dry ingredients with some of the parmesan (keep some for the top)
  • Add sauteed onion
  • Add cheddar – grated (or gruiere – not blue, its too strong)
  • Mix a bit
  • Add buttermilk (full-fat)
  • Mix with a spoon or bring together with your hands
  • If you need more liquid, add some water to the empty buttermilk bowl and get that out
  • Line baking tray with baking paper
  • Shape into 2 ball/dome shape loaves, place on paper
  • Wet hands slightly and tap top of breads – then sprinkle the remaining parmesan on (the water helps it stick)
  • Cut each into 4, deeply, with a scraper
  • Into over for 20 to 25 minutes
  • Let them cool before you eat it with cheese and butter
