Black Garlic Puree

Black garlic puree (like a mayonnaise made with black garlic).

Ingredients

  • 190g peeled black garlic
  • 85ml water
  • 15g xanathan gum
  • 2.5g salkt
  • 15g white wine vinegar
  • 15 caster sugar

Method

  • Place all ingredients in a Thermomix set to 60C and blitz until smooth
  • Alternatively, place all ingredients in a blender but with boiling water instead of cold water.
  • Pass through a fine sieve and set aside to cool.
